Spanish horchata
Today, we invite you to discover a traditional plant-based beverage of Spanish origin: horchata, made from tiger nuts, also known as chufa or tchongon in West Africa.
Naturally lactose-free, gluten-free, and nut-free, this beverage is perfectly suitable for people with lactose intolerance or food allergies. Tchongon is a pseudo-nut rich in fiber and minerals, which can be enjoyed on its own as a snack or transformed into a delicious homemade plant-based milk.
Here is everything you need to prepare your own healthy and refreshing homemade horchata.
Ingredients
- 250 g of tigernuts (available in our online shop)
- 150 g of sugar
- 1 L of water
- Ground cinnamon (optional)
- Ice cubes (optional)
Equipment
- 1 blender
- 1 strainer
- 1 cheesecloth
- 1 carafe (about 1.5 liters)
- 1 medium or large bowl
Preparation
- Rinse the tigernuts thoroughly under cold water.
- Place it in a bowl and add 2 to 3 times its volume in water.
- Cover the bowl with a clean kitchen towel.
- Let soak for 24 hours to soften the grains. This step is essential to achieve a smooth texture and optimal extraction.
- Drain and rinse the tigernuts using a strainer.
- Add the tigernuts, water, and sugar to the blender.
- Blend until smooth.
- Strain the mixture using the cheesecloth.
- Pour the liquid into the carafe.
- Add ice cubes and a pinch of cinnamon to taste.
- Serve chilled and enjoy.
